Sicilian calamari from my papa
  Main Dish

Preparation : 15 min
Cooking : 2 hours in all

Ingredients (for 8 - 10 people :
- 4 lbs (1.8 kg) of calamari in strips
- 3 - 4 cans of peeled tomatoes (or 2 large cans)
- 4 garlic cloves
- 5 onions
- 1 1/4 cup of dry white wine
- 1 little can of capers
- 4 branches of thyme
- a bay leaf
- a large handful of parsley
- a celery leaf
- 1/2 teasp of Cayenne pepper
- olive oil
- salt and pepper


Directions:

Cut onions in strips, crush garlic.

Brown them in olive oil.

Add in the squid, cook for 15 min.

Drain it and set aside returned water.

Sauté on high heat, add the wine and let it reduce 10 min.

Add all the herbs, pepper, capers with their vinegar, salt and pepper.
Drain the peeled tomatoes, cut them coarsely and add them to the dish.
Reduce each time, gradually add the water returned by the squid.

Let it simmer for 1 h 15 - 1 h 30.
At the end of the cooking, add the necessary amount of water, or to thicken the sauce add in cornflour if the juice is abundant.

Remove the large thyme branches.

Serve with a scented rice.
Very very yummy!!
