Quenelles ( veal or chicken dumplings )

Ingredients (serves 4 people):

- 250 g veal (can be made with fish or poultry)
- 150 g bread-crumbs
- 2 cups of milk
- 2 eggs
- 1 1/2 oz of butter
- salt and pepper


Preparation:

Chop finely and mash the veal to obtain a kind of paste.

Incorporate the bread-crumbs soaked in milk and drained in your fingers.

Combine the bread-crumbs with the meat and add the butter.

Mix, season with salt, pepper, add 2 egg yolks and the whites beaten in snow.

Make some pellets, roll them in a little flour and cook them in boiling water for 15 min, reducing the heat after 5 min.
