- 6 scallops
- 7 oz of bacon slices
- 1/2 + of shrimp
- finely chopped parsley
Marinade :
- 6 tbsps of olive oil
- 4 tbsps of dry white wine
- 2 shallots finely chopped
Directions:
Cut the scallop in half. Roll up each piece in a strip of bacon, then thread the pieces thus prepared on the skewers while alternating with some shrimps.
Put the marinade in a broad and not very deep container.
Coat the skewers of marinade and let them sit for at least 2 hours.
When they're ready to be cooked, coat them in the marinade again and slowly cook them on the charcoal, or grill, while turning the skewers often.
Duration of cooking 8 to 10 minutes.
When serving, sprinkle on top of them some fine chopped parsley.
Alternatives: you can also alternate, on your skewers, large mussels coated with beaten eggs and 2 spoonfuls of oil, salt and pepper, and then rolled in stale bread crumbs or: large shrimps, with small thick bacon rectangles, lemon half-discs, or: two dozens oysters rolled in melted butter and chapelure, cocktail sausages and mushrooms.
