 | Chocolate mousse with 3 chocolates |  |

Preparation: 30 min (3 x 10 min)
Cooking: 6 min (3 x 2 min)
Ingredients (serves 6):
- 4.5 oz of dark chocolate
- 3.5 oz of white chocolate
- 3.5 oz of milk chocolate
- 1/3 cup of butter
- 4 egg whites
- 2 gelatine sheets
- 1/2 cup of cream
Directions:
1st layer :
Soften the gelatine sheets in cold water. Dissolve the milk chocolate with about half of the cream and add the gelatine sheets to it. Mix well.
Whip the egg whites to stiff peaks and carefully fold them into the chocolate.
Pour this at the bottom of the mold and place it in the fridge so that it cools. You have about 1/2 hour to make another one, use this platter with the next two layers.
2nd layer:
Same thing with the white chocolate, half of the cream, 1 gelatine sheet and one egg white whipped into stiff peaks. Pour in then place the mold in the refrigerator for 1/2 hour.
3rd layer:
Melt the dark chocolate with the butter. Whip 2 egg whites into stiff peaks and incorporate them in the molten chocolate. Make a third layer and place the mold in the fridge.
It takes two hours for the cake to set, before unmolding.

It's best to do it in this order, because it looks good and the dark chocolate is pretty thick. |
