Preparation : 36hours Cooking : 20 min
Ingredients (for 4 people):
- 1 + lb of salted cod (vacuum)
- same quantity of potatoes
- 1 bunch of parsley
- olive oil
- garlic, salt, pepper
Préparation :
Unsalt the cod by soaking it in water for 36-48 hours before you begin the brandade preparation (change water regularly)
Steam the potatoes and crush them with a fork.
Drain the unsalted cod and mix with the crushed potatoes, peeled garlic and the minced parsley.
Add the olive oil little by little (the more there is the better it is)
Pepper.
Taste and eventually add a little salt.
Put the puree in an oven pan and cook for 15-20 min.
Broil before serving.
