Aligot (mashed potatoes with cheese and garlic)

Ingredients (for 6 For 6 people) :
- 300 g tomme fraîche d'Auvergne cheese (or Cantal)
- 500 g floury potatoes
- 50 g butter
- 200 ml crème fraîche
- 1 clove of garlic
- salt and pepper

- 10,6 oz tomme fraîche d'Auvergne cheese (or Cantal)
- 17,6 oz floury potatoes
- 1,8 oz butter
- 200 ml crème fraîche
- 1 clove of garlic
- salt and peppe

Method :


Cook the peeled potatoes for 25 to 30 minutes in a water-filled saucepan then drain.
Blend them into a purée and season with the butter, crème fraîche, crushed garlic, salt and pepper.
Cut the cheese into very thin strips and add to the purée over a low heat.
Beat with a large wooden spoon for at least 15 minutes, creating "figures of eight" and whisking until you obtain a smooth paste that doesn't stick to the sides of the pan.
On each plate, serve a large string of aligot and cut with scissors.

Advice :

You can serve the aligot with grilled sausages or slices of bacon.
