Beef bourguignon stew

Main course - Rather easy - Not too expensive

Preparation time : 30 minutes
Cooking time : 90 minutes

Ingredients (for 4 persons) :
- 1 kg 100 gr of beef for marinating
- 200 gr of smoked bacon

- 100 gr of onions
- 8 garlic cloves
- 3 carrots
- 2 turnips
- thym, bay leaf
- 1 bottle of wine
- 1 glass of cognac
- Mustard
- Parsley
- olive oil
- salt and pepper
- 4 spice mix
- 3 pieces of sugar

- 2 1/2 lbs of beef for marinating

- 7 oz of smoked bacon

- 3.5 oz of onions

- 8 garlic cloves

- 3 carrots

- 2 turnips

- thym, bay leaf

- 1 bottle of wine

- 1 glass of cognac

- Mustard

- Parsley

- olive oil

- salt and pepper

- 4 spice mix

- 3 pieces of sugar

Method :


24 hours ahead of time: cut the beef in large pieces and take off extra fat.
Put it in a large bowl with the onions, garlic, herbs and the sugar.
Salt and pepper to your taste, then add the cut carrots, the turnips cut in quarters, 1 tbsp of '4 spices'.
Mix well then add in the wine and the cognac.
Set it in the fridge for 24 hours while mixing every 6 hours.
The next day, drain everything while filtering the marinade in a drainer (put aside).
Heat some olive oil in a large pot just until it gets hot. Place the pieces of meat inside and brown a little.
Add the pieces of smoked bacon cut into strips, then brown for another 5 min.
Add the vegetables with the herbs, then cover with the marinade. Cook for 20 min on high then add it to the pot and put it in the oven for 1 hour at 350°F (170 °C).
At the end of the cooking, add 2 tbsp of mustard.
Parmesan with the parsley and it's ready!

Advice :

Serve with mashed potatoes.
