English cake with candied fruits

Dessert - Easy - Not too expensive - Vegetarian - Without Pork - Kosher

Preparation time : 30 minutes
Cooking time : 120 minutes

Ingredients (for 10 persons) :
- 280 to 300 g of sugar
- 1 packet of vanilla sugar
- 450 g of flour
- 6 eggs
- 1 packet of yeast
- 350 g of butter
- 400 to 500 g of mixed sultana raisins or malaga, or currants

- 125 g of orange and lemon peels
- candied fruits: cherries, garden angelica
- 125 g of almonds
- 1 glass of rum liquor
- nutmeg
- 1 tsp of cinnamon
- 1/2 lemon zest

- 10 to 11 oz of sugar
- 1 packet of vanilla sugar
- 16 oz of flour
- 6 eggs
- 1 packet of yeast
- 13 oz of butter
- 14 to 17.5 oz of mixed sultana raisins or malaga, or currants

Don't have that...


- 4.5 oz of orange and lemon peels
- candied fruits: cherries, garden angelica
- 4.5 oz of almonds
- 1 glass of rum liquor
- nutmeg
- 1 tsp of cinnamon
- 1/2 lemon zest

Method :


The quantities above are for 2 cake molds of 25 cm (9.85 inches) or a springform mould.

Wash the raisins and cut the oversized ones.

Rehydrate them with some water and rum (in the microwave).

Cut the orange peels.

Beat the butter then add the 2 sugars and beat until it forms ribbons.

Add the eggs one by one and beat well.

Add the rum and mix well.

Add the flour, yeast then the drained raisins, the fruits (except for the cherries and almonds), 2 pinch of nutmeg, cinnamon and lemon zest.

Butter and flour the cake molds and line them with parchment paper.

Pour half of the mixture, add a tight line of cherries in the middle then pour the other half of mixture.

Add a line of whole almonds on top.

Divide the preparation in 2 cake molds or in one springform mould and bake at 150 °C (300 °F) for 1 hour (if 2 molds) or 2 hours (if 1 mold).

Check if it is baked with a wooden skewer.
