Sauteed green asparagus and coppa

Preparation time : 5 minutes
Cooking time : 15 minutes

Ingredients (for 4 persons) :
- 1 bunch of thin green asparagus
- 80 g of thinly sliced coppa
- 1 piece of Parmesan
- Olive oil
- Balsamic vinegar

- 1 bunch of thin green asparagus
- 3 oz of thinly sliced coppa
- 1 piece of Parmesan
- Olive oil
- Balsamic vinegar

Method :


Cut raw asparagus into sections of about 2 cm (0.8 inche) (no need to peel them!), Put the tips aside.

In a hot skillet, sauté over high heat the sections of asparagus in a little olive oil.

After 5 minutes, add the coppa cut into strips and asparagus tips. Continue cooking 5-10 minutes (asparagus should remain crunchy), deglaze with balsamic vinegar and place them on plates.

Sprinkle each serving with Parmesan cheese and serve immediately.
