Turkey Galantine

Ingredients (for 4 persons) :
- 600 g turkey breasts
- 300 g pork roast
- 75 g cured ham
- 75 g Parmesan
- 20 g pistachios
- 1 egg
- 3 slices stale bread
- 1/4 cup milk
- 1/2 cup white wine
- 2 black truffles
- 1 onion
- 1 carrot
- rosemary
- salt, pepper
- nutmeg
- a dash of olive oil

- 1/4 cup milk
- 1/2 cup white wine
- 2 black truffles
- 1 onion
- 1 carrot
- rosemary
- salt, pepper
- nutmeg
- a dash of olive oil

Method :


Preheat your oven to 200°C (thermostat 6-7).

Soak the stale bread in milk for 10 minutes.

Dice the ham and the truffles.

Chop the pork roast. In a mixing bowl, add it to the parmesan, eggs, pistachios, salt, pepper and nutmeg. Add the bread, ham and truffles.

In a large frying pan, cook the onions and the carrot with a dash of olive oil and rosemary. Add the meat mixture.

On a baking tray, lay out the turkey breasts and flatten them with a rolling pin. Place them on the tray so that they overlap each other. Cover with plastic wrap and flatten them again.

Spread the meat mixture on top. Roll the galantine.

Bake for 45 minutes, while moistening it regularly with white wine.
